Easy Beef Enchiladas

Easy Beef Enchiladas

Ingredients
20 oz Old El Paso Mild Enchilada Sauce
1 1/2 cup Reduced Fat Shredded Mexican-Style Cheese
1 pound cooked extra lean ground beef or ground turkey
12 Mission Carb Balance tortilla

Instructions
1. Heat oven to 375 degrees. Lightly grease 13x9-inch glass baking dish. In 10-inch skillet, cook beef over medium-heat, stirring occasionally, until thoroughly cooked; drain. Stir in 3/4 cup enchilada sauce and 1 cup of the cheese.

2. Spoon enchilada filling onto tortillas; roll up and place seam sides down in baking dish.

3. Pour remaining enchilada sauce over top; sprinkle with remaining 1/2 cup cheese.
Bake 15 to 20 minutes or until hot.

Servings: 12 enchiladas ; 3 pointsplus, 2 points (per enchilada)

These are very similar to the ones I make! Only I use taco seasoning in the meat. And add put the sauce in the bottom of the pan and on top of the tortillas! It's a family favorite in our house! :)

With this recipe, you could easily add peppers and onions to it for more veggies.

Danielle - Those sound good! There are times when I have made these and added Taco seasoning for extra flavor.

Jen - That is a great idea! I've never added peppers and onions to this before.
